This week I made a healthy shredded chicken and it is so delicious!
In the crock pot!
For those of you who get my newsletter, you know that this week I was asked if I could make any recipes that were gluten free, grain free, nightshade free, dairy free, nut free, sugar free, and soy free. Or what I like to call, Fun Free.
So this sounded like a huge challenge for me, especially since I love to eat all things that are bad for me. Or smothered in bacon and/or cheese. But nevertheless, I think I found a couple good ones.
Here’s what you’ll need:
3-4 Boneless chicken breasts (Frozen)
2-3 cloves garlic (minced)
salt and pepper
1 sliced yellow onion
(If you can have nightshades, add 1 sliced green bell pepper)
That’s it. Throw it all in the crock pot and cook for about 5-6 hours on low.
Around hour 5, you’ll want to take each piece of chicken out and shred it with a fork. It shreds super easy. Then throw it back in, give everything a good stir and start on the rest of dinner.
I love this recipe because number 1, if you forget to put dinner in the crock pot in the morning you’re not screwed. You can throw this in around lunch time and it will still be ready for dinner. And number 2, it is really so versatile. The first night we had it on tacos and smothered it in the delicious salsa I made, and the next day I made it into a chicken salad and had sandwiches. But you can use this hot or cold, and make it healthy! Eat it on a salad!
I will note that if you are going to use thawed chicken breasts, you should probably add 1/2 cup of chicken broth to the recipe to keep it from drying out. But if you want to keep this “Fun free” as I like to call it, stick to the recipe above!
